This wine has complex fresh cut apple and baked pear aromas followed by quince, pear and apple flavours with a distinctive minerality. The flavours are concentrated and mouthfilling, although the wine is made in a semi-dry style.
The grapes were handpicked, crushed, pressed and the juice was cold settled before a slow fermentation in seasoned French barriques using wild yeast. Barrel aged 10 months on lees. As a low volume of this wine was made in 2015 and 2016 we have combined them both to give a unique blend of two delicious vintages.
